Lemon and blueberry cheesecake overnight oats

Creamy, zesty and bursting with flavour, these lemon and blueberry cheesecake overnight oats taste indulgent while delivering a nutritious start to the day.


With around 20g of protein and 9.5g of fibre per serving, they're designed to keep you feeling fuller for longer, support steady energy and promote a healthy gut.


Serves: 2

Ingredients

  • 80g rolled oats

  • 20g oat bran

  • 10g ground flaxseed

  • 10g chia seeds

  • 300ml dairy milk or unsweetened plant milk

  • 200g Greek yogurt

  • Zest of 1 lemon

  • Juice of ½ lemon

  • ½ tsp vanilla extract

  • 120g fresh or frozen blueberries

  • Optional: 1 to 2 tsp maple syrup


Method

  • Add the oats, oat bran, flaxseed and chia seeds to a large bowl or jug.

  • Pour in the milk and stir well.

  • Mix in the Greek yogurt, lemon zest, lemon juice and vanilla extract until smooth and creamy.

  • Gently fold through most of the blueberries, reserving a few for the topping.

  • Divide between two jars or containers, cover and refrigerate overnight (or for at least 4 hours).

  • Top with the remaining blueberries and a little extra lemon zest before serving.
